Salmon w/ Supergreen Macadamia Pesto

Salmon w/ Supergreen Macadamia Pesto

Serves 2

Dietary: Gluten-free, dairy-free, protein-rich 

Cook time: 20 mins 

Ingredients

2 pieces of wild-caught salmon

1 cup macadamia nuts

1 bunch basil, stems removed

1 lemon, zest and juice

¼ cup extra-virgin olive oil

¼ cup cold water 

Salt and pepper to taste

1 bunch of asparagus 

1 wedges of lemon to serve



Method

  1. Preheat oven to 180°C

  2. Add basil, macadamia nuts, olive oil, lemon juice and zest, salt and pepper in a high-powered blender. Blend until combined [approx 15 seconds]. Add more cold water or olive oil to help blend if required. 

  3. Line a baking tray with baking paper, and place salmon fillets on top. Spoon over pesto and add asparagus to the baking tray.

  4. Bake for 15-20 minutes depending on how well you like your salmon cooked.

  5. Divide salmon and asparagus onto 2 plates and serve with a wedge of lemon.
