Chicken, Olive & Dill Burgers

 
Healthy Chicken Burger Recipe

STOP buying lunch at work & make this instead! Whether you’re trying to save money, or sick of eating the same thing every week for lunch at work this recipe is for you. Prepping my Chicken, Olive & Dill Burgers will take your meal prep game to new heights in the flavour dept, as well as making sure you’re eating enough protein, and will help to reduce those pesky 3 pm sugar cravings. Makes 6 burger patties

Ingredients
500g free-range chicken mince
1/2 brown onion, finely sliced
1 bunch chives, roughly chopped
1 bunch of dill
1/2 cup pitted green olives, roughly chopped
1 lemon, zested
sea salt + black pep to taste
Extra-virgin olive oil to cook

Create

1. Combine all ingredients together in a large mixing bowl with a wooden spoon.
2. Line a baking tray with baking paper and place to the side. Use your hands to form the mixture into 6 even-sized patties, place on the baking paper, and drizzle with olive.
3. Place a frying pan over medium heat and drizzle with olive oil. Once the pan is warm (approx 2 mins) carefully place the patties onto the pan and cook for 5 minutes per side, or until cooked through. I like them to be golden brown on each side.
4. Serve immediately, or once cool place into an airtight glass container in the fridge for up to 3 days.

I love to serve these with a big green salad, roasted pumpkin, toasted hazelnuts, avo, and cashew cheese.
