Easy Char Grilled Zucchini w/ Sumac, Feta + Raw Honey

 

Take your weeknight meals to the next level with this super easy, fibre-rich char grilled zucchini. I love to serve this dish with slow-cooked lamb, grilled barramundi, or chicken. See the recipe reel here.

Serves 4


Ingredients


4 medium zucchini, cut in half
1 tbsp Cobram Estate extra-virgin olive oil
A good pinch of sea salt flakes and black pepper
1 tsp fennel seeds
1 tsp ground sumac

Garnish
1/4 cup fresh mint, roughly chopped
1/4 cup Danish feta cheese
2 tbsp slivered almonds
1 tsp raw honey


Create


1. Preheat oven to 180 ° C fan-forced and line a baking tray.
2. Score zucchini and transfer it onto a plate. Drizzle with olive oil, sea salt, black pepper, fennel seeds, and sumac.
3. Heat a medium non-stick pan over medium heat. Once warm, add zucchini scored side down and cook for 5 mins or until golden brown.
4. Transfer zucchini onto the lined baking tray, and cook for 20 mins or until tender.
5. Garnish with mint, feta, almonds, and raw honey.
